Salsa Fresca with Pepitas

Drain and chop a can of whole, peeled tomatoes, and mix with 1 cup chopped cilantro leaves, ½ cup diced red onion, 2 roasted and finely chopped serrano peppers, and 2 tbsp lemon juice. Season to taste (salt and pepper), and then mix in some toasted and ground pepitas [pumpkin seeds] for a delicious pumpkin salsa fresca.
